Why can a rideshare driver owe a lot even after deducting miles and other business costs?

People see gross receipts drop to a much lower net amount after mileage and platform fees, and they assume the tax should be tiny. Then they still owe a painful amount. I want to understand why that happens and what planning could have reduced it.
